Backstrap / loin wants hot and fast. Overcook it and you will swear venison is always dry. Pull it early and rest.
Ingredients (2–3 servings)
- 1 venison backstrap / loin roast, silver skin trimmed
- Salt and black pepper
- 1–2 tbsp oil or butter
- Optional: garlic, rosemary/thyme, splash of stock or wine for a quick pan sauce
Method
- Pat dry. Salt 20–40 minutes ahead if you can; pepper just before the pan.
- Heat a heavy skillet until hot. Oil, then sear the loin on all sides.
- Cook to rare/medium-rare (about 125–130°F in the center for many tastes), then rest 5–10 minutes.
- Slice across the grain. Deglaze the pan for a quick sauce if you want.
Food safety: Prefer a thermometer over guessing. Whole-muscle steaks cooked to your preferred doneness; grind and sausage rules are stricter — treat ground differently.
