Simple ground venison skillet

Ground venison is the weeknight workhorse. Keep it simple: brown hard, season well, and do not be afraid of a little fat if your grind is very lean.

Ingredients (4 servings)

  • 1 lb ground venison
  • 1–2 tsp oil or 2–3 oz mild pork/beef fat if the grind is extra lean
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning or chili powder, cumin, salt, pepper to taste
  • Tortillas or rice, toppings you like

Method

  1. Heat a skillet over medium-high. Add oil/fat, then onion until soft.
  2. Add venison. Break it up and let it brown — do not steam it in a crowded pale pile.
  3. Stir in garlic and seasoning; cook until fragrant and cooked through.
  4. Serve as tacos, over rice, or in a quick skillet with salsa and cheese.
