Steak strips are the fast skillet cut when you want fajitas, rice bowls, or a quick stir-fry. Slice thin against the grain, get the pan hot, and do not crowd the meat or it will steam gray.
Ingredients (3–4 servings)
- 1–1½ lb venison steak (round, sirloin, or similar), partially thawed for easier slicing
- 1–2 tbsp oil with a high smoke point
- Salt and black pepper
- 1 onion and/or bell pepper, sliced (optional)
- 2 cloves garlic, minced
- Optional marinade or finish: soy sauce, Worcestershire, garlic powder, chili powder, squeeze of lime
Method
- Trim silver skin. Slice into thin strips against the grain (¼ inch or so).
- Optional: toss with a light marinade 20–60 minutes in the fridge; pat dry before the pan so they sear.
- Heat a large skillet until hot. Oil, then add strips in a single layer — work in batches.
- Sear hard 45–90 seconds per side until browned but still tender. Salt/pepper as they cook. Pull to a plate.
- In the same pan, cook onion/pepper if using; add garlic briefly. Return meat, toss with a splash of soy/Worcestershire/lime if you want a glaze. Serve immediately over rice, tortillas, or salad.
Tips
- Partial freeze (20–30 minutes) makes neat strips easier
- Very lean grind of heat = dry strips — hot pan, short time
- Leftovers reheat gently; better slightly under than over in the first cook
